How can I restart a game in Resident Evil 5 using the other playable character?

I just beat the game for the first time playing Chris Redfield (xbox360). I wanted to try to play Sheva, but accidentally chose Chris when starting a new game. Now all I can do is "continue" or choose a chapter.
